Gastronomy is born from the art of living, and often its development, a reflection of its countries of origin, the result of the efforts of all its players to allow it to realize itself and develop. Building on the strength of these principles, since its inception in 2011, the Academy of Culinary Arts of the Creole World founded by Georges Garnier with project manager Fred Fortuny and surrounded by Nicole Etienne, the centerpiece of the institution, strives to introduce as many people as possible to the culinary heritage of Creole.
One of the main ambitions of the Academy of Creole Culinary Arts (ACMC) is to raise awareness, promote and transmit this culinary heritage, as well as make it an important art and a lever for economic and cultural development.
The Akras Festival is organized in the framework of “Creole celebrates‘, a Creole version of the Festival of Gastronomy – a government initiative launched in 2011 – engages in this endeavor to advance the knowledge, technology and work of Creole gastronomy professionals.
This event is a great opportunity for the public to discover and meet chefs and artisans who work with a passion united around shared values such as authenticity, respect for products and seasons and the use of local produce. Thus, for the Acres Festival, ACMC partner restaurants offer a menu with a special dish on the theme of “Accra“.
Chairs for all tastes
Whether it’s cod, chicken, veggies, giraumon, herring-saur, shrimp, sweet potatoes or carrots, an impressive array of flavors blending local produce and Creole cuisine, Accra is available for every taste. It is a highly regarded and popular traditional dish in the West Indies that allows catering professionals to reinterpret the legendary signs of traditional Creole cuisine.
Also called Acres “Books“They are fried little cakes somewhat seasoned with chili. They appeared as a Good Friday custom in the West Indies, imported from Africa and more specifically from Dahomey (Benin), and arrived in the cooking baggage of slaves. They are now an integral part of Caribbean cuisine. They are especially used as a garnish and garnish, they are also used in Catalan, Spanish and Portuguese cuisines and are known as cakes.

The sixth edition of the Acres Festival will take place from 16-18 September in the Parc Floral de Vincennes and will be an opportunity for the audience, whose number has been increasing over the years, to experience a joyful moment, to exchange with professionals from the sector and above all to savor the dishes rich in flavor and colors that highlight the Gourmet cuisine prepared from fresh produce grown on the territory of France.
In addition to this 3-day culinary journey around Accra, the public – adults and children alike – will be able to participate in workshops and attend cooking demonstrations with the help of chefs Katia Despres, Marie Claire Annely and Ludovic Robar. Musical entertainment will also be presented on the Floral Park platform for this purpose.
